Asian Inspired Salmon Burger on Brioche

This is a healthy recipe quick to make and delicious.


You will need (makes 4 patties)

330g salmon portions skin removed (no bones)

1 lime

1 piece of ginger (about 2cm)

1 stick of lemongrass

2 TLB coriander

1 Chili (optional)

2 TBL mint

1 chili (optional)

1 small red onion

Brioche Bun (per serve)

Salad to top i.e. lettuce, tomato, basil, avocado (or whatever you fancy)

Oil for shallow frying

Chilli sauce (optional)


Step one: Finely chop the ginger, lemongrass (peel the outside first), coriander, mint and onion place in a bowl and squeeze the lime juice over the mixture. Cut up the salmon into small pieces.

Step Two: Combine the salmon and chopped ingredients together and mash until it has a sticky consistency. I used this tool that I was introduced to by Norway's celebrity chef, Erling Sundal. You can use a food processor if you prefer just don't over process.

Once you have the right consistency, then shallow fry the patties about 3 minutes each side or until brown.

Place the patties on your lightly toasted Brioche Bun, top with chili sauce or jam then sprinkle some coriander, basil a squeeze of lime and add your salad mix.
